It's What's For Dinner...

Guess what's for dinner? I got this recipe at the super market and now, I'm going to try it...



Tuscan Baked Tomatoes
3/4 cup finely chopped fresh parsley
3/4 cup Italian breadcrumbs
2 cloves minced garlic
1/4 tsp. red pepper flakes
1 1/2 lb. plum tomatoes
1/4 cup olive oil
1/4 tsp. salt
1/4 tsp. black pepper
1/4 cups grated Parmesan cheese
PREP TIME: 15 minutes COOK TIME: 35 minutes SERVES: 4
1. Preheat oven to 400 degrees. Combine parsley, breadcrumbs, garlic and red pepper flakes in small bowl; set aside.
2. Cut tomatoes in half lengthwise and remove the seeds and juice. Using a spoon, fill with the bread crumb mixture. Place in shallow baking dish. Drizzle with olive oil and season with salt and pepper. Cover with aluminum foil.
3. Bake 30 minutes. Remove from oven; uncover and top with Parmesan cheese. Broil 1 or 2 minutes more; until lightly browned.
I'm going to make this tonight. I'll half everything because there are only two of us. If it turns out okay, I'll post about it tomorrow. If not, let's just forget we ever had this conversation.
